/usr/lib/rpm/macrosを見ますと、

%_arch                  i386
%_vendor                redhat
%_os                    linux
%_target_platform      
%{_target_cpu}-%{_vendor}-%{_target_os}


が入っています。
しかし、spec guidance 文書によると、%_vendor, %_pakager
の上書きは禁じられているようです

# %_arch はi386よりi586の方がふさわしいと思います。。。
